This is a great dish for the weekend, and it comes together very easy. This also a fantastic dish when you want to have breakfast for dinner. Make sure to add in some minced garlic cloves while cooking the onions for the evening version.
1 tbsp | Olive Oil |
1 - 375g package | Siwin Pork Tosino |
2 tsp | Olive oil |
1 cup | Onion, chopped |
3/4 cup | Roasted Red Pepper chopped |
1 tsp | Ground Cumin |
1 tsp | Sweet Paprika |
1/4 tsp | Dried Crushed Chilies |
1 - 28 oz. 796 ml | Canned Diced Tomatoes |
1 tsp | Salt |
1/2 tsp | Pepper |
5 | Eggs |
1/2 cup | Feta Cheese crumbled |
3 tbsp | Parsley, chopped |
Turn oven on to 350º f
Heat oil in a large oven safe pan to medium heat. Add Siwin Pork Tosino and scramble fry for 5 to 7 minutes, or until browned. Remove to a plate. Add second amount of olive oil and heat to medium. Add onion and red peppers. Cook for 5 minutes stirring occasionally until onions are soft. Add the next three ingredients and stir until fragrant. About 1 minute.
Add the cooked pork and the next three ingredients. Stir well. Simmer until the sauce has thickened, stirring intermittently.
Make a well in the sauce. Gently crack an egg into the well over the tomatoes. Repeat with remaining eggs. Transfer pan to oven and bake until eggs are set. About 10 to 12 minutes, until desired doneness is achieved. One might have to cook longer if a more well done yolk is wanted.
Garnish with feta and parsley. Serve immediately with toast and hot sauce (if desired).
