An easy way to prepare dinner on a busy night. You can even do meal prep by having the herbs chopped, the squash, sausages, Brussels sprouts, and red onion all cut a couple of days before. Make sure to cut your apples just before adding it to your sheet pan.
1/3 cup | Olive Oil |
3 tbsp | Fresh Sage, chopped |
1 tbsp | Fresh Thyme, chopped |
4 | Garlic Clove, minced |
2 tsp | Lemon Juice |
1 tsp | Salt |
1/2 tsp | Pepper |
6 cups | Butternut Squash, diced |
1 | Siwin Foods Hot Longanisa Cured Sausage 375 g package (Sausages cut in half) |
2 | Apples, medium diced |
1 1/2 cups | Brussel Sprouts, washed, halved, and outer leaves removed |
1 cup | Red Onion, chopped |
Preheat oven to 400ºF.
In a small bowl, combine the first 5 ingredients
On a prepared baking sheet toss the next 5 ingredients together. Pour herb mixture over squash mixture and mix together. Bake in oven for 60-70 minutes, stirring halfway through.
